Organic Foods in Venetian tradition of cooking: Learn Easy Recipes organic cookies

The region of Veneto, which includes the islands of Venice, and a vast territory covering the land Padova, Verona, Vicenza and was largely an agricultural area devoted to agriculture fruit and vegetables, wheat and maize during the pre-industrial era. Because money was scarce, families survived largely on the fruits of their labor: A system designed around organic grains such as corn, which were in abundance, and fish from the Venetian lagoon. Meat were considered a luxury. In fact, cured meats and sausages have been a solution to the lack of refrigeration and offers friendly alternative to other "bad" food.

Thus, organic baking traditions reflects not only the ancient traditions, organic ingredients but also the most readily available. Conversion of polenta in a cookie or candy for the table represents the marriage of the nutrition. In fact, most traditional Venetian cookies are organic dry, wet, rather that, given the scarcity of organic ingredients, the difficulty in their preservation, and the palette preferences of the Venetians for a biscuit organic. Many of the desert and organic cookie recipes have been secret, transmitted through the maternal side, and often nicknamed "biscotti della nonna" or "Cookie Grandma" to represent their home origins. Organic Food Ingredients: 1 1 / 3 cup finely ground cornmeal, 7 / 8 cup flour, ½ cup sugar ½ cup unsalted butter, 2 eggs, ¼ cup raisins, half an ounce of yeast, 1 lemon zest, ½ of a small glass of grappa, a pinch of salt, 2 tablespoons of flour for the workspace, 4 tablespoons sifted slightly sugar.

Place the raisins in warm water for 10 minutes to soften. Drain water and squeeze gently with your hands remove excess water. Place in a bowl and add the grappa to "bathe" them for about 20 minutes. Then drain the grappa and dry with a very clean kitchen towel.

Sift wheat and maize flour with baking powder and salt and place in a bowl. Add beaten eggs and melted butter. Mix with a fork and add the raisins. (Follow these steps before you add raisins to ensure they do not fall to the bottom: the light dust with 2 tablespoons of flour). Add sugar and lemon zest.

Mix until the dough becomes homogeneous. Place the dough on a lightly floured work space, and expand to a thickness of just under ½ inch. Using the roll pin to help you, and using a knife, cut long oval about 2 inches long.

Place on a baking sheet, not too tight, and bake in an oven at 350 degrees for 20 minutes. Once cooled, sprinkle with icing sugar and serve with your favorite liqueur.
